CO2 adjustment

For adjusting the carbon dioxide level up or down in a wine, Air Liquide's solution consists of injecting a small quantity of carbon dioxide gas into the wine for increasing its carbon dioxide level, or for decreasing its carbon dioxide level by injecting nitrogen which will strip excess carbon dioxide from the wine before degassing.
